One of our priorities is sustainability and being kind to the environment – from using Rainforest Alliance approved coffee beans and reducing our food waste to energy-saving equipment such as our amazing Aquilo fridge and freezer.

I needed a new upright freezer urgently and was keen to get an energy efficient ‘green gas’ model that would be environmentally friendly and economic to run. Aquilo seemed to offer everything I needed at a very reasonable price and I’m delighted I made the decision to opt for the brand.
Delivery was great. So good, in fact, that my new freezer arrived the day after I ordered it and it’s been performing faultlessly ever since. The cabinet is very sturdy and well-made and it maintains temperature superbly. Also, there’s no sign of ice build-up which was a problem I had with previous freezers. I’m amazed at the quality and will definitely be buying a new fridge from Aquilo in the near future.

Getting the right refrigeration for the new restaurant was key and we looked at a lot of fridges before making our final decision to go with Aquilo. We recently acquired an Aquilo upright fridge specifically for patisserie ingredients because, as a trained pastry chef, this is an area I want to expand, and I can honestly say it compares very favourably with the other 5 leading brand fridges and freezers we’re already using. We recently purchased two items from Aquilo for the Dakota Hotel – an undercounter glass froster and an upright freezer.

The glass froster is sited behind the bar of The Terrace, a popular outdoor area serving light meals and drinks, with a focus on cocktails. We believe that chilled glassware is essential to a good cocktail, both to maintain the integrity of the drink and for its sheer visual appeal. Also, in this Instagram age, customers want to post images of their drinks and clearly appreciate the way they look as well as taste.

We serve a huge number of cocktails and, although it’s compact, the Aquilo glass froster can hold a generous amount of glasses and delivers perfect results in minutes.

Meanwhile, the Aquilo upright freezer is one of two we have in our main kitchen. It’s used primarily for batch stocking of food and is used on a daily basis. It functions perfectly and, unlike many I’ve worked with over the years, is proving exceptionally reliable.
